Pizza Chili Supreme

With the weather turning so cold recently, I have been craving soup. There is something about a hot bowl of soup on a cold day that warms you up from the inside out.

This chili not only satisfies a craving for some hearty soup; it also satisfies a craving for pizza. What I love about it is that it is a great option when you are hungry for pizza but want a healthy, low-carbohydrate alternative.

My Pizza Chili Supreme is quick and easy to make, but the result is so yummy and satisfying. My recipe calls for turkey sausage and turkey pepperoni, but you can substitute Italian sausage and original pepperoni easily. You can also add or delete any pizza toppings of your choice. It is terrific served by itself for a low-carbohydrate option, or for bread lovers, served with crusty bread or bread sticks.

Pizza Chili Supreme

Makes 6 servings, 260 calories per serving

INGREDIENTS

  • 1 pound turkey sausage or 1 package turkey sausage crumbles
  • 1 can (16 ounces) kidney beans, rinsed and drained
  • 1 can (15 ounces) pizza sauce
  • 1 can (14-1/2 ounces) Italian stewed tomatoes
  • 1 can Rotel tomatoes &diced chilies
  • 1 can (8 ounces) tomato sauce
  • 2 cups water
  • 4 ounces sliced turkey pepperoni
  • 1/2 chopped green pepper
  • 1/2 chopped red pepper
  • 1 medium onion, chopped
  • 1 can mushrooms, chopped
  • 1 1/4 teaspoons pizza seasoning or Italian seasoning
  • 1/4 teaspoon oregano
  • 1 teaspoon salt
  • 1 tablespoon ranch seasoning
  • Shredded Mozzarella or grated Parmesan cheese, optional
  • Fresh basil, optional

INSTRUCTIONS

  • In a large saucepan, cook the turkey sausage over medium heat until no longer pink; drain. If using sausage crumbles, skip this step and pour the sausage in with the remaining ingredients, below.
  • Add remaining ingredients and stir well. Bring to a boil. Reduce heat; simmer, covered, for 30 minutes or until chili reaches desired thickness. Sprinkle with cheese and basil, if desired.
  • Serve and enjoy!
